Last week I also cooked of course. I made a yummy zucchini casserole.
Ingredients:
2 Tomatoes (slices)
2 Zucchini (slices)
340 g (1,5 cups) ground meat
1 onion (chopped)
2 gloves of garlic (chopped)
240 ml (1 cup) tomatoe sauce
450 g (2 cups) cottage cheese
1 egg yolk
60 g (1/4 cup) grated cheese
1 tbs. chopped parsley
1 pinch salt
1 pinch pepper
Instructions:
Heat oven to 260 °C (500 °F)
Put baking paper on baking sheet. put the tomatoe and zucchini slices on it. Bake for about 10-15 minutes.
Sear ground meat, onion and garlic in a pan until fried. Stir in tomatoe sauce and cook.
Put meat mixture into a casserole and put baked vegetable on top of it.
Reduce heat of oven to 180°C (350°F)
Mix cottage cheese, egg yolk, grated cheese, parsley, salt and pepper in a bowl. Spread over vegetables.
Bake for 35-45 minutes.
